Our six essentials, one by one
Each speciality links to a dedicated page, so you can dig deeper before coming to taste it on Place des Cardeurs.
Which Italian specialities are the real essentials?
When it comes to must-try Italian specialities, a handful of dishes is enough to sum up the Italian table. At Di Micheli, the family trattoria on Place des Cardeurs in Aix-en-Provence since September 2021, our menu revolves around those classics: Neapolitan pizza, fresh pasta, antipasti and homemade desserts such as tiramisu. Rather than offering everything, we'd rather do the essentials well, with fresh produce and no frozen dough.
This page gathers our most requested specialities and explains why they earn their place among the essentials. Every dish mentioned links to a dedicated page: read up on whatever interests you, then come and try it in the dining room or on the terrace, a stone's throw from the historic centre.

Neapolitan pizza, if we had to keep only one
Our dough ferments for 24 hours at 70% hydration before spending a few seconds in the wood-fired oven heated to 480°. That combination is what makes a pizza light, supple and easy to digest, with the puffed crust typical of Naples.
From the margherita to the burrata version, pizza remains the heart of our menu, and the first speciality we recommend to anyone discovering Italian cuisine.

Fresh pasta and antipasti, the everyday classics
Beyond pizza, fresh pasta is one of the essentials we make in house. Worked on site, it has nothing in common with industrial pasta: the texture, the bite and the taste are on another level entirely.
We serve it alongside antipasti to open the meal in pure Italian tradition, with produce chosen for its freshness. Together these two families round out the pizza and make a proper Italian meal, from starter to main.

Tiramisu and Italian desserts
No Italian table would be complete without its desserts, and tiramisu is one of our favourite specialities. Made in house, it closes the meal on a soft, indulgent note, alongside our other Italian desserts.
That homemade approach guides the whole menu: we keep the range deliberately small to guarantee the freshness and the care given to every plate, rather than multiplying options.
Italian cuisine is a living heritage, rich in regional specialities. To explore its full range, browse Italian cuisine on Wikipedia, then come and find our essentials on our plates.

A setting for every occasion
Discovering our Italian specialities also means enjoying a place built for every moment: a quick lunch, a family meal, a birthday or a company dinner, with tailor-made menus. All in the heart of Aix-en-Provence, on Place des Cardeurs.
